Cranberry Crumb Crisp

Grandma kept an extra can of cranberry sauce on hand during the holidays, so this crisp was a family tradition for us.

Grandma kept an extra can of cranberry sauce on hand during the holidays, so this crisp was a family tradition for us.

Ingredients

Serves 9 

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 8 tablespoons (1 stick) butter, softened
  • 1 cup whole-berry cranberry sauce
  • Ice cream or whipped cream, optional
Directions

    Preheat the oven to 375F.

    Combine flour, oats, granulated sugar and brown sugar in a medium bowl. Cut in butter with a pastry blender until mixture is crumbly.

    Spread half the crumb mixture on bottom of an 8 x 8-inch baking dish and pat firmly. Spread cranberry sauce on top of the crumb mixture.

    Sprinkle remaining crumb mixture on top of cranberry sauce.

    Bake the crisp until golden, 35 to 45 minutes. Serve with ice cream or whipped cream, if desired.

Grandma's Secret Trick

The flavors of orange and cranberry together seemed Christmassy to Grandma, so she made orange whipped cream for topping the crisp. She beat 1/2 pint whipping cream with 3 tablespoons of sugar and the grated zest of 1 orange and let it chill for a few minutes before serving it.
