Easy Baked Alaska

Ingredients
Serves 6
- 1 (10 1/2-ounce) frozen yellow loaf cake, thawed
- 6 chocolate covered ice cream bars (3.3 ounces each)
- 4 eggs whites, at room temperature
- 1/4 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/2 cup sugar

Cut cake in half horizontally. Place cake halves cut side up on a 12-inch square of aluminum foil.

Remove sticks from ice cream bars. Arrange ice cream bars on top of cake halves. Wrap securely with the foil. Place in freezer.

Preheat the ovento 400°F.

Combine the egg whites, vanilla extract and salt in a medium bowl. Beat with an electric mixer set at medium speed until soft peaks form. Add granulated sugar 1 tablespoon at a time, beating continually. Beat until stiff peaks form.

Place the cake on a baking sheet. Open and flatten the foil.

Spread meringue over top and sides of the ice cream bars and cake, sealing to edges and swirling the top to make a pattern.

Bake until meringue is golden brown, about 3 to 4 minutes. Transfer to a cool baking sheet. Rewrap and freeze for 4 hours. Cut into squares to serve.

grandma's secret
Grandma knew the secrets of this dessert were moving quickly and making sure the ice cream was frozen solid before the dessert was baked. She used baking sheets without a lip so the Alaska could easily slide off and on. When it was time to spread on the meringue, she worked quickly and without interruption.
