Prep time:
10 minutes, plus chillingCook time :
none“This decadent mousse tastes like it came from a fine restaurant, yet it can be prepared in ten minutes, without any fuss!”
Ingredients
Serves 4
- 1 package (3-ounce) cream cheese, softened
- 1/2 cup confectioners’ sugar
- 1 tablespoon cold strong brewed coffee
- 1/2 teaspoon vanilla extract
- 11/2 cups whipping cream, divided
- 4 ounces semisweet chocolate, melted and cooled
- 1 ounce unsweetened chocolate
- 6–8 small fresh strawberries
Directions
1

Place the cream cheese in a medium bowl. Beat with an electric mixer set on medium speed until creamy, about 1 minute. Add the confectioners’ sugar, coffee and vanilla. Beat until smooth, about 1 minute.
2

Add 1 cup whipping cream to the bowl. Increase speed to high. Beat, scraping down the side of the bowl often, until soft peaks form, 1–2 minutes. Add the melted chocolate and beat until slightly thickened, about 1 minute. Spoon the mousse into 4 dessert cups.
3

Grate the unsweetened chocolate over each dessert. Refrigerate until chilled, at least 2 hours.
4
Place the remaining cream in a small bowl. Beat until soft peaks form, 1–2 minutes. Garnish each dessert with the whipped cream and strawberries. Serve.

The semisweet chocolate can easily be melted in the microwave. Just place the chocolate in a small microwave-safe bowl. Microwave on HIGH for 1 minute, stirring halfway through.
