Grandma served this on busy days because she could make the gelatin in advance and simply buy ice cream.

Ingredients

Serves 8 

  • 2 (3-ounce) packages raspberry-flavored gelatin mix
  • 2 cups boiling water
  • 1/2 cup cold water
  • 1 tablespoon lemon juice
  • 1 (12-ounce) package frozen raspberries, slightly thawed
  • 1 (12-ounce) package frozen peaches, slightly thawed
  • 1 pint vanilla ice cream
Directions

    Dissolve the gelatin mix in the boiling water in a large bowl. Stir in the cold water and lemon juice.

    Add the raspberries and peaches to gelatin mixture and stir gently until fruit thaws and separates.

    Spoon mixture into a 5-cup ring mold. Chill, covered, until firm, about 4 hours.

    Unmold the gelatin onto a serving plate. Fill the center with scoops of ice cream. Serve immediately.

Grandma's Secret Trick

For a special treat, Grandma sometimes made almond-flavored whipped cream for topping the gelatin instead of serving it with ice cream. She whipped 1/2 pint of whipping cream with 3 tablespoons of sugar and 1/2 teaspoon of almond extract until soft peaks formed, then refrigerated the whipped cream until serving time.
