Spiced Apple Fritters

Ingredients
Serves 20
- 1 1/2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 1 1/4 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup milk
- 1/4 cup (1/2 stick) butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 2 large apples (1 pound)
- 4 cups canola oil
- 1 tablespoon confectioners' sugar
Directions

Combine the flour, granulated sugar, baking powder, cinnamon and nutmeg in a large bowl. Place the milk, butter, egg and vanilla in a medium bowl. Whisk until blended. Stir the milk mixture into the flour mixture until just moistened. Set aside.

Peel, core and slice each apple into ten 1/4-inch-thick rings.

Heat the oil in a large saucepan or deep-fat fryer to 350°F or until a cube of bread dropped in the oil browns in 1 minute. Dip the apple rings into the batter, turning to coat evenly. Deep-fry the apples in 5–6 batches, turning once, until crisp and golden, about 2 minutes per batch. Drain on paper towels. Dust with the confectioners’ sugar. Serve warm.
