Spiced Chocolate Pudding

This spiced pudding always reminded Grandma of her childhood in Mexico.

This spiced pudding always reminded Grandma of her childhood in Mexico.

Ingredients

Serves 6 

  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 2 (12-ounce) cans evaporated milk
  • 1 cup semisweet chocolate chips
  • 2 egg yolks, lightly beaten
  • Whipped cream, optional
  • Additional ground cinnamon, optional
Directions

    Combine the granulated sugar, cornstarch and 1 teaspoon cinnamon in a medium saucepan and mix well.

    Add evaporated milk gradually to sugar mixture, stirring continually. Stir in chocolate chips and egg yolks.

    Bring to a boil over medium heat, stirring continually. Cook mixture, stirring continually, until thickened, about 10 minutes. Remove from heat.

    Spoon pudding into individual dessert cups. Chill, covered, until set, about 1 hour. Top with dollops of whipped cream and sprinkle with cinnamon, if desired.

Grandma's Secret Trick

For a richer pudding, Grandma occasionally added a pat of butter per serving to the pudding mixture after removing it from the heat. To prevent a "skin" from forming on the pudding, she covered each serving with plastic wrap, pressing the wrap directly onto the surface of the pudding before chilling.
