Strawberry Heart Pastries

Ingredients

- 1 box (17 ounces) frozen puff pastry (2 sheets), thawed
- 2 cups sliced strawberries
- 2/3 cup confectioners’ sugar, plus more for dusting
- 2 cups whipping cream
- 1 teaspoon vanilla extract
- 8 whole strawberries

Preheat the oven to 400F. Unfold 1 sheet of puff pastry on a lightly floured surface; score into 4 squares. Cut out a heart from each square with a 4-inch cookie cutter. Place the hearts on ungreased baking sheets. Repeat with the remaining pastry sheet.

Pierce the pastry hearts generously with a fork. Bake until golden, 12 to 15 minutes. Transfer the hearts to wire racks and cool completely.

Combine the sliced strawberries and confectioners’ sugar in a medium bowl; stir until the sugar is dissolved. Beat the whipping cream and vanilla in a chilled large bowl with an electric mixer on medium-high until stiff peaks form, 3 to 5 minutes. Fold in the strawberry mixture.

Carefully cut each pastry heart horizontally into 2 layers. Place the bottom layers on individual serving plates. Spoon about 3/4 cup whipped cream–strawberry mixture onto each heart. Top each with a top layer of pastry. Lightly dust with confectioners’ sugar and garnish with whole strawberries.

If Grandma did not have the time to chill the bowl for whipping the cream, she simply set the bowl of cream in a larger bowl filled with ice water.
