Corn And Bell Pepper Sauté

Frozen corn never tasted so good! With a quick sauté in butter with bell peppers, shallots and garlic, it turns into a colorful, zesty treat.

Frozen corn never tasted so good! With a quick sauté in butter with bell peppers, shallots and garlic, it turns into a colorful, zesty treat.

Ingredients

Serves 6 

  • 1 small red bell pepper
  • 1 small green bell pepper
  • 2 tbsp. (1/4 stick) butter
  • 1/4 cup finely chopped shallots (about 2 medium)
  • 2 cloves garlic, minced
  • 1 package (16 oz.) frozen whole kernel corn
  • 1/2 tsp. dried thyme
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
Directions

    Deseed and chop the red and green bell peppers.

    Heat the butter in a medium nonstick skillet over medium-high heat until melted, about 30 seconds. Add the chopped bell peppers, shallots and garlic. Cook, stirring occasionally, until crisp-tender, 1–2 minutes longer.

    Add the corn, thyme, salt and black pepper to the skillet. Cook, stirring occasionally, until heated through, 5–7 minutes. Serve immediately.
