Creamed Spinach Casserole

Ingredients

Serves 6 

  • 3 tbsp. butter
  • 1/2 cup thinly sliced white onion (about1 medium)
  • 2 tbsp. all-purpose flour
  • 2 cups milk
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 cup shredded Gruyère cheese
  • 2 packages (14–16 oz. each) frozen cut leaf spinach, thawed and squeezed dry
  • 1/2 cup herb-seasoned croutons, coarsely crushed
Directions

    Preheat oven to 375°F. Melt the butter in a medium heavy saucepan over medium-high heat. Add the onion. Cook, stirring frequently, until softened, 4–6 minutes.

    Stir in the flour until smooth. Cook, stirring constantly, for 1 minute. Whisk in the milk, stirring occasionally, until the mixture comes to a boil and thickens.

    Remove from heat and stir in the salt, pepper, Gruyère and spinach. Spoon the mixture into a 2-quart casserole dish.

    Sprinkle with the croutons. Bake until heated through, 15–20 minutes.
