Vegetable Medley Au Gratin

Ingredients
Serves 4
- 1 package (16 oz.) frozen broccoli, carrots and cauliflower
- 1/4 cup (1/2 stick) butter or margarine
- 1/4 cup all-purpose flour
- 1/2 tsp. garlic salt
- 1/4 tsp. black pepper
- 11/2 cups milk
- 2 cups shredded Swiss cheese, divided

Preheat oven to 375°F. Place the frozen vegetables in an ungreased, 2-quart microwave-safe baking dish. Cook according to the package directions for microwave preparation.

Melt the butter in a 2-quart saucepan over medium heat. Add the flour, garlic salt and pepper. Cook, stirring constantly with a wire whisk, until bubbly and smooth, 1–2 minutes. Remove from heat.

Stir the milk into the pot. Bring to a boil, stirring constantly. Boil and stir for 2 minutes. Stir in 1 cup Swiss cheese until melted. Pour the sauce over the vegetables in the baking dish. Stir gently to mix.

Top with the remaining cheese. Bake until bubbly around the edges and cheese is lightly golden, 25–30 minutes. Serve.
