Ingredients

  • 1 cup (2 sticks) butter, melted
  • 1 cup chunky-style peanut butter
  • 1 cup firmly packed light brown sugar
  • 1 cup granulated sugar
  • 1 cup butterscotch chips (instead of chocolate as a variation)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3 large eggs, lightly beaten
Directions
  1. 1

Preheat oven to 350°F. Lightly spray a 13x9inch baking pan with nonstick cooking spray.

  2. 2

Combine the melted butter, granulated and brown sugars, the eggs and vanilla in a large bowl. Whisk until smooth. Add the peanut butter. Mix well.

  3. 3

Combine the flour, baking powder, baking soda and salt in a medium bowl. Slowly whisk the flour mixture into the peanut butter mixture until well mixed. Stir in the chocolate chips.

  4. 4

Spread the batter in the prepared pan. Bake until a toothpick inserted in the center comes out clean, 32 to 35 minutes. Cool completely on a wire rack. Cut into 24 bars to serve.
